We all need something to munch on when we’re binge-watching, right? I’m not a big fan of chips because they make me nauseous. I don’t like popcorn either, because it makes me cough uncontrollably. What I do like is homemade bruschetta. It’s probably the easiest thing in the world to put together, because even I can do it. Though I don’t take credit for these – it’s my niece who prepares them. It’s all about fresh veggies and cheese, which are all good. Bruschetta also helps me pretend that we’re sitting in some Italian street cafe being all sophisticated.

Ingredients:

  • Sliced bread
  • Diced fresh tomatoes
  • Fresh basil
  • Parmesan cheese
  • Garlic
  • Salt and pepper

Directions:

  1. Lightly toast one side of the bread slices. Once that’s done, put some diced tomatoes, fresh basil and sprinkle some parmesan cheese on the toasted side. If you’re a fan of garlic (I am), you can also grate the garlic on one side for that extra flavor, before putting the other ingredients.
  2. Lightly toast the other side of the bread slices until the cheese melts, which will probably take 2 – 3 minutes. Season with salt and pepper. We like ours extra peppery so we put more of that than the salt.

And that is it! Five minutes, and you have yourself a delicious, healthy snack.
